Hey on my series x my gf has ultimate on her account and when I sign into my account I can play games she has got, is this possible with PC game pass or is it only the account your using?

No, this doesn't work the same way with PC as it does on console.

Make her acct as the home acct on ur series x and u can play all the games on her acct. Just note cloud gaming will only work on her acct and cannot be shared
