Keep in mind that Xbox 360 does not support USB 3 so there will be a limit to the throughput of the connection. You will certainly not get the full benefit of an SSD drive (although there are other benefits that you may care about).

and 2TB is the limit (at least was when I bought my drives)

Oh wow good memory on the 2tb limit. The old 360 support page mentions that too. A different page notes that you can at least have 2 of them
