-Guys can i use a use normal charging phone cable to charge the xbox series s controller and playing at the same time without any problemes?
-And can i use the controller without batteries

That's more for XB1 controllers with micro-USB. Series controller is USB-C so you should be fine.

Just remember that if you do want to use batteries or a battery pack, only the official Xbox Play and Charge kit will charge via that USB port. AA batteries and third party battery packs won’t charge that way.

So here's the thing - if you are using a USB cable that is not directly connected to the console, it will definitely charge. However, it will not automatically stay on if you leave it idle for 10 minutes, I think it only does that when directly connected to a console.

Be cause the headphone are connected to the controller and the cortroller will turn off

If you need more USB ports you can use a USB hub. Otherwise, yes, if your controller is not directly attached to the console it will turn off when idle, i believe. You can always test it yourself.
