I am working on a Sorcerer Subclass that focuses on summoning fallen souls as companions and having a dedicated summoner theme.
Flavour wise it is a bit messy, and I would really love some help with that, along with any help/suggestions for balancing the class.
I still need to create some example stat blocks for companions, as well as the base stat block for the level 18 feature, any help with that would go a long way.

Damn i really like a lot of the ideas here! i think the easiest way to make it a bit less messy, may be to not use monster stat blocks for this. it's been a problem with summoning spells up till recently. Usually what works best here is making x amounts of stat blocks to cover x amounts of different summons. So for example if you could only govern the souls of Beasts and Humanoids for example. One companion could be a warrior soul, next a magic soul, a marksman soul, a land beast, a flying beast, a swimming beast, a burrowing beast. Then it's also easier for the player to know what summon they can get. The summons HP should also probably be based on your sorcerer level rather than you hp. Or else it could become Crazy tanky on the battlefield. This could be dependent on the statblocks of the summon. For example the warrior statblock could be based on fighter they have a d10 hp. Witch means the average they get is 6. So the warrior could have 6hp per sorcerer level in this class. plus your CHA modifier. just to give it that little extra early on and it gives the feel that your summon is also stronger because of your magical powers it's attacking capabilities should also be dependent on your spell attacking ability. Soul tether i like it! Umbral shield i love it, both the ability and the flavor! Mabey rebirth ritual Could be something like when a creature dies in combat. you can strengthen your companion with it's soul. giving your companion a one round buff to damage/hitting/tanking, or gave it a smite like feature where the next attack your companion hits it takes Xd8 extra damage. Mabey have it be an amount of times per prof, or cha mod. If limited don't make it take a reaction. if it's not limited then it should be. Rapid summoning i like it, but you should probably get 1 or more free uses per long rest, or else i don't really this is gonne get used alot. Symbiotic resonance i think is really cool, but again i think you should get some free uses of this. since it uses you reaction (which i think it should.) i think this should be free up till your cha mod per long rest and 2 sorcery points to use more. Since it is also limited by the summons hp. Umbral convergence, really nice, but i would not make it hurt everyone. Makes it more clunky around allies. Also it would mean that if you and the summon is next to each other, you are both taking damage. Mabey make it reusable with sorcery points. Legion of souls. i really like it. Here the only thing that can be a problem is being able to put too many bodies on the map. The only way to find the exact sweet spot is to playtest it. Mabey the second summon has half hp or something like that. I love the idea of the 18th level feature! i would just make a separate statblock for this completely, like it's hp being the combined pool. This will evade it becoming the DM's nightmare aswell. Gotta say alot of cool stuff!
Hope some of the input is helpfull!

Alright so I agree with the idea of limiting what can be summoned, I also like the ideas you suggested for hp. I think going forward I will be doing their hp in that style of x d y + cha (x being level and y being dice value) Possibly as an additive for the flavour I am considering it being creatures of intelligence, less so in a stat sense and more so in a sense of if that creature would be able to comprehend a higher being the master.

Rebirth Ritual I am still uncertain of how I want to take it, as I feel a mechanic to buff summons is needed for later game, however in its current form it is very strong and cheap, I like your concept of having fallen companions becoming a damage buff similar to smites. To detour slightly, whilst writing I had the thought of having the ritual be ways to unlock new abilities, so for example a Knight Soul may be able to unlock a smite ability costing some embers to obtain, and then maybe using your sorcery points as a cost? This feels interesting to me, however I am unsure on how balanced it would be, again its a spur of the moment idea.

Rapid Summoning and Symbionic resonance I think would be nice to have free uses up to your Charisma modifier before costing sorcery points to use, at least per long rest. I also agree on reaction for Symbionic resonance and will add that.

I agree with umbral convergence, and will add a note of it only affecting those you target, I probably will also add a sorcery point cost to this after you use it once or twice for free.

Leigons of souls will be getting play tested by me in an upcoming campaign where I playtest the whole sorcerer and do tweaks for gameplay, so I cant say much on it right now.

Agiphael I think will get their own stat block, and will most likely have the combined hp of both components, I might consider doing a few variants, for the spice of fusing a Knight with a Witch, or a Beast and a Ranger, I think that would add the most flavour.

I also know some sorcerers get their own spell lists, and I was considering this for them, not this exact list but I think it would help the sorcerer themselves out since they get little in terms of abilities and its mostly their summons which get the abilities

You also usually get the option of replacing the given spells based on schools of magic in the wizard, warlock, and sorcerer spell lists, and you usually get to choose in 2 schools. If you do this, one of them definately should be necromancy.
Definately reccommend doing an expanded spell list

Doing several statblocks for agiphael sound very smart and cool!
