#How to get FF-AD5X to load the first filament

I'm very confused.

I've got a 3 color print, so I loaded the 3 colors on my FlashForge AD5X - it feeds filament to the extruder (I presume until it hits the filament sensor) then backs it off a few inches.
Then I told Orca (regular v2.3.1, not the FF-specific version) which color is on which spool.
I slice & send the print. It goes through its warm up routine, tries to generate the prime line at the back of the plate and stops, telling me that it's out of filament & I need to load some. But wait, I just manually went through the filament load process!

Which filament do I load? I have no idea what color it's going to start with. Why doesn't it know and just simply load based on the spool colors I've got defined???
OK, TBF, I ran the slider all the way down to the 1st layer, and I know which print-by-object it's going to start with and I can go to the printer and manually load that spool, but seriously, why can't it just figure it out and load the required filament on its own??

OK, sorry, that was really whiney.

What setting(s) am I missing to get it to load the first color. I've run into this on other prints, too - even with only a single color of filament loaded and entered into the screen, if I don't do a manual load (via the screen), it won't start feeding filament when it starts a print.
