I can't use any of the keybinds requiring ctrl+something. Is there a fix or is it just because it's mac os?

Well on mac you use cmd

I'm on an azerty keyboard, I can't use cmd+z it makes me move forward instead of undoing.

Where can I change the key binds ? There not appearing in the option menu

In Editor Mode look at the top
this is the main menu bar
there you can find your keybind window
