I have done some experimenting with my mod folder and have concluded that the issue I was having was because of starlight. Log Errors and video of issue below

Possible Solutions:

Update Fabric from 0.14.22 to 0.14.23

A recent starlight update made it so that if you try to access parts of vanilla, it crashes

I've fixed it in my dev version, either downgrade starlight or wait for the Axiom update

But I got a lot to work on before I can release
