Got to NanInf with 616 Kings of Spades, Stell and Red Seal, stopped at 500 cards being back on the deck and the game let me progress.
Tried another NanInf with 116 Kings, the same thing happend, just this time all cards returned to the deck.

what exactly is the issue you are facing here? If you are talking about not getting the game crash other people talk about after hitting a naneinf, you need to reload the game save to get the crash

Isn´t it that you would normaly get a "Game Over" screen after NanInf, or was that changed

no, the game over screen is forced if you reach ante 39, from there it's actually impossible to hit the required score since that score is naneinf, which isn't a number as far as the game is concerned
scoring naneinf doesn't end the game, reaching ante 39 does through numbers being too big does
