Basically after selecting your first cards to play or discard, the mouse “disappears” and becomes hidden but can still move over ontop of cards and such - just just don’t see the dot/circle for where the mouse is. Disconnecting the iPad from the keyboard/mouse combo (official Apple one that holds the iPad) fixes it but only for another round until you select cards to discard and play and it repeats this. Also switching apps returns the mouse cursor again, but only temporarily as mentioned. Makes it impossible to play with the Apple touchpad.
