I just beat my last Deck with Gold Stake fulfilling the criteria of the Completionist+ Achievement but it hasn’t been unlocked.

typically this is fixed by simply winning another game on any stake

not ideal, sure, but it should work

not sure if this was clear enough, but you don't have to beat gold stake again, a win with any deck on any difficulty will do
