Honestly the original presentation is top-notch from fonts to micro-interactions, I wouldn't normally change a thing. I'd love however to experiment with different backgrounds, a mostly black BG would look stunning on an OLED screen (mine is 32:9 mini LED).
I wonder how would I go about this, a nudge in the right direction would be massively appreciated.

Is this the kind of thing you're wanting?
if you're happy to just completely remove the background, that's fairly simple; comment out lines 2681/2682 in game.lua (if that gives issues, do 2677, 2679-2684 instead)
Otherwise, look at lines 2676-2685 of game.lua; this is where the background gets drawn. Mod something in there to draw your preferred background.

This is exactly what I'm trying to do. Couldn't find the .lua scripts in the game folder though. Am I supposed to install something first?

Use 7-zip and open the executable as an archive. If you use 7-zip's ability to replace files in the archive without extracting it (drag and drop files onto the graphical interface), you won't break the executable.

Yes, you can edit and adjust the textures in the resources directory
