It doesn't have 30% gallop skill in the description because it never had gallop skill its just a 100% speed mount. Look at a 95% speed unicorn that actually has a gallop skill with a % of speed boost

Yes not just 100 speed all horses who had gallop skill. Have it disappeared from description.
