farms should have a seed type setting for each row or even each point. The point is that when we arrange 4 types of vegetables, unfortunately the employees sow random amounts of e.g. turnips or radishes, which makes it impossible to determine the exact quantity

You can select exactly what type of seeds to plant. Set the ones you don't want to zero

Ok but i don't whant to have mixed by farmers! I whant to have one row for beetroots, one for turnips ect. When my farmers have 4 vegetables on farms and rest are off, my farmer plant for example only one beetroot, couple of turnips and rest potatoes, no matter if i have same amount of seeds or even same priority

I was able to achieve the result you want by setting the priority of everything to 0 and manually planting everything 😁 With the current state of farm yields you don't need to mass-produce stuff in farms anyways, at least not in the early game (the only exception is garlic and a bit of flax, because you can easily turn those into cash moneys). I ultimately do agree with the suggestion though, having orderly rows of different crops in farms helps in planning immensely, and is, most importantly, very visually pleasing 😉

Idk I set some to low priority and still get all hemp growing.
