I feel that crouching/stealth gameplay is an essential part of almost any 1st/3rd person game that features any form of combat. Sneaking up on your choice of animal during a hunt, or stealthily moving in for the kill at a bandit camp would lend itself to more immersive gameplay and provide alternate means of confronting your target. Stealth is a very integral part of hunting, as just wantonly traipsing through the woods would leave you walking home empty handed and frustrated. Barging into an enemy encampment while the numbers and odds are decidedly not in your favor has much more potential to lead to you and your band of merry villagers untimely death. Or, at the very least, dismemberment.
Having a stealth system in place will allow for different tactics when approaching these scenarios (and others), leading to more immersive and satisfying gameplay.
You could even possibly implement the ability to command your compatriots to set up in a favorable position and set an ambush, thus providing even more engaging (and satisfying!) combat!
