Try using metaphors like colors.
People are born pink and blue, but some people prefer the color pink even when they're blue, and others prefer the color blue when they're pink. Some just don't like either color, and prefer purple instead.
There are all sorts of explanations on the Internet that you can use as well

I have this same problem. It’s so hard to explain what it means to be non binary because like, what am I supposed to say, I’m not a boy or girl? Most people tend to find that hard to understand. The color metaphor is good tho. (Can confirm I prefer purple, it is the superior color)
