There are 4 leveling zones on the Broken Isles. Once you are done with one, you can start another. The game won't actually direct you to the table to pick a new zone, you just have to figure it out yourself.
In order to start a new zone, return to your map table in your class order hall. There, in one of the tabs you will find a map where you pick one quest out of the remaining you haven't picked when you started the Stormheim story.

If you hit level 110 (which you should) you normally skip all the rest of the Legion story and go to BFA. But if you really want to see it all, the next step would start in Dalaran from Kadghar, where a strange magical anomaly suddenly appears.

Right - as a rogue, you're restricted in the weapons and armor you can wield
For example, you wouldn't be able to equip a staff, a greatsword or a plate helmet.

Hi! So, I reached level 60 on my Paladin. Now, since I escaped noob leveel having learned the game. I deleted my Paladin and started over today (I got him to level 60 in like... 3-4 days or so? So it's not a big deal to me). Anyway, I know I need to focus on a few things because I still got a lot of my health taken off when fighting mobs the same level as me. So I have a few questions (@ me if you respond as I might be looking at some guides in the meantime);
- Outside of your 2 "main" professions (For me that will become blacksmithing and mining) You have 3 other "minor" professions you can choose, what are they and which ones are recommended?
- As a Paladin, what stats should I focus on with my gear as I level up? I mainly play as ret paladin but I also keep a sword and shield in the back for those rare occasions I need to go and tank cuz our tanks got afk or smthing.
- Making money/Selling items, so with questing and dungeons you get items obviously, some trash, some good but not usable for my class. When should I sell something to a vendor, and when should I auction something and against what price?
- Keeping attention, last thing I noticed a lot is I didn't pay attention to the mobs. I looked mostly down at my ability bar to see the cooldown timers and it was really hard to focus on multiple things at once. How do I improve on this?

and you can have all of them so doesn't matter
2 - don't overthink it, stats only matter at max level
3 - sell anything you can't use, if you're fussy try installing Auctionator or something to pricecheck sellable items on auction house, otheriwse sell to vendor
4 - practice, but you could always try UI addons to see if anything directly helps you

2) As you level up, you pretty much use whatever has more item level. Your armor should be plate, and your weapon have strength. At max level you can start care about secondary stats distribution. For that, look up a guide, for example on Icy Veins.

it'd be worth googling around for UI modification, there's any number of stuff and it'll be subjective to you. ElvUI is pretty customisable, as well as Bartender to mess with the default UI options

Any plate should have both strength and intellect on them anyway. But if it is not the case, use the ones with strenght. Trinkets and rings might not have any primary stat. So basically, more ilv = better, or at least not much worse.

Most pieces of gear will have both (one will be grayed out) in that case it's a flexible piece of gear that changes its stats to match your spec.

Do whatever you like. You main objective at first is to reach Kul Tiras/Zandalar. Then you can worry about most other stuff.
Even green and blue quest items can get you there easily.

I think it's best you narrow it down to 2-4 classes, as the process of levelling each to 80 before you decide can be maddening 😛
Pick a role you want to fill, and a general idea, and there's always a couple classes that would fill it. Eg. If you want to be a lightly armored melee DPS, try monk or rogue. If you want to hit things from far away and have a pet, warlock or hunter. Etc.
