It did not "unfreeze", she just cleared the blight and it was gone. At no point does it say it returned, or at no point do you even see it "frozen" in the first place. She had an ice circle thingy explode and the explosion cleared all the blight away. The fields were then re-tainted with Blight because Sylvanas went full Cersei on Lordaeron and released more blight.
While laughing and flying away like a cartoon villain.
