Then vers for Arcane, and Crit/Mastery for Demo
But class changes are coming on Tuesday, so that could possibly change. I'm not really abreast of how stat priorities are going to be altered as we lead into BFA

the +15 to professions now applies to all categories

except for the ability to craft things that are a bit higher earlier
once you are max level in a profession, there is literally no difference
in fact, one of the main benefits (as far as I can tell) during levelling has been voided: ability to start on next expansion recipes 15 levels earlier
now you have to get those last 15 levels using the same expansion recipes
(of course, one could argue that legion and wod voided the benefit too, but the time for that argument has long passed)

a simple scenario / questline like the currently available allied races does not cut it, there's a reason the zone achieves and reps are required.
