Druids using daggers (assuming you're feral) was basically a Legion only thing. Normally, druids cannot dual wield, and haven't used daggers seriously since around BC. If you go to the transmogrifier, and pull down the panel to choose a weapon, you can see your artifact daggers, and transmog over any weapon, polearm included. Druids will be using staffs and polearms this xpac, but you can get your artifact appearances by right clicking one of the daggers in the Artifact appearance tab, and choosing which tint you want. Unfortunately, you're locked to only those dagger appearances, unlike Legion, but you get your form.

Yes. The box ensembles will be removed alongside the title and the achievement. If you don't get them now you won't be able to get them later.
Do note that the pieces of the set do drop individually from the bosses, except for the Helm and the Shoulders (arguably the most important parts of a set), which can only be obtained through the box ensemble.
