I personally have a theory that since Azerite is popping up everywhere in the world, perhaps it has inside Teldrassil as well, or it absorbed it through its roots. And during the Battle it ignited and caused a massive chain reaction. That would be reasonable explanation to me. If you look at the artwork of pre- and post-burning you see magical 'veins' of golden color coursing through the tree which is where I got the idea from. (There's also the fact that apparently Sylvanas didn't intend to burn it down which backs up the 'incident' theory, at least the word used is 'conquer', not destroy or burn or anything, but that's more up to interpretation or change in the future)
