I don't know about 3 stages but atleast having a small and standard option would be nice for a few animals
Making you unlock a better building for the animals.

i think a significant thing to this is it would have to work like the houses do when you replace do it because the sizes would have to change to accommodate bigger space for animals to live in. so you cant just place the newer structure over the only one like you can for most buildings
Two problems that upset me with the current type of buildings for animals: 1) the fact that the animals always get stuck at the entrance, 2) the fact that the buildings for animals made of branches and straw quickly become unusable, and with prolonged play they have to be repaired every year .
Imagine the size of a bigger stable for horse or donkey 
Add different size of Animal Buildings
For small villages, it would be nice to have a small (1, possible 2 cows) cowshed. This would fit in nicely with the ascetics of a small village or outpost versus the current cowshed which can houses 8 cows. This would allow a small village to produce milk for the villages. An example of this in the games is the village of Tutki where there was one cow.
Add a working farm animal food trough. The concept here would be a simple way to address the desire to have a single farm animal in a village without needing the software developers to modify any of the existing farm animal buildings. The food trough:
- Could be place anywhere on the map. For example in a fenced in area.
- It would allow the player to purchase and place either one horse or one cow or one goat/sheep.
- The animal would stay near the food trough, like they currently do.
- No NPC would be assigned to the food trough.
- If desired, the player would supply the food trough with animal fed. Remember animals don't die if not feed.
- If desired, the player would milk either the cow or goat, sheer the sheep for those resources.
