Short answer: Studio does support Eleven v3 (alpha), but the model is selected at the project level, not per‑chapter. You’ll find it in Project settings.
What to do
Open your Studio project, click Project settings (the three lines next to Export), and change Model to “Eleven v3 (alpha).” Studio supports the latest speech models, including v3, and you can switch models any time in Project settings. (elevenlabs.io)
If you created the project earlier, its default model may be Multilingual v2; you can still switch to v3 from Project settings. (elevenlabs.io)
