@lean vale - what are you trying to change it to? Valheim presets are kind of hard coded into the game server. If you want to just adjust difficulty modifiers, then it would be through Valheim Plus or something else.
Or are you using another mod that has it's own presets?

Yeah Valheim Plus allows for that. The settings are further down in the Valheim Plus setting
There's a lot of Valheim Plus settings under Basic Settings
It also needs to be set under this configuration to Valheim Plus

One is called Death Tweaks on Nexus mods.
Of course I am not sure if its up to date or even works its been over a year since I played.

I believe Nexus mods has a mod manager so it does most of it for you.
Just remember if you download mods you will also need to put them on the server for them to work right and on anyones computer that joins.
You probably should find a video on using Nexus mods for client and server
