I'm trying to build a deployable probe that can be deployed out of the service bay of a rocket.
Thing is - the delivery rocket keeps tipping over either backwards or sideways.
I tried adding struts, reactions wheels, gimble, control fins - nothing helps.
I even tried playing around with different configurations such as no cargo bay but direct attachment, or a fairing, or going with a 4 booster config - it always ends up tipping over.
Any tips?

Why does the image of the craft in the VAB look different from the craft flown in the third picture?
In the third image the craft looks very heavy on the top, that could be the issue. \
it could also be the wings
the pitch is often times flipped, so it turns opposite everything else and also fights with sas
when it might be that it could be that you try to correct it and make it worse, because the controls do the opposite of what you think they should do
the rocket could also be to top-heavy and at the moment fairings don't work
the aerodynamics don't take them into consideration
I think adding more wing surfaces on the bottom could outweigh the drag coming from the top
Or removing some drag heavy parts from the top
but then he should turn everything of except pitch and flip it
at least for planes that is my work around at the moment

Anyway I also thought it was just being top heavy but various things I've tried to make it more bottom heavy didn't help either.
The control surfaces being reversed sounds more likely - since it only starts happpening when I start my gravity turn and the more I try to correct the more erratic it becomes
Also it would suck if it turned out only SOME of them are reversed, it sounds like a hell to fix
Symmetry is kinda broken I think

i believe it is just the pitch that is flipped
disable everything else except pitch and reverse it
if you want yaw and roll add another set of wings at the end of it
disable pitch on them, but don't reverse their controls
that is at least my approach when building planes at the moment and you want to fly with sas and engine gimbal
no, you want it to be top-heavy.

OK even this super simple rocket easily tips over
I'm starting to think the common denominator is the hydrogen tank
Yup, replaced it with a regular tank and it was fine.
It was also much heavier - I think @somber coyote hit it straight on the head: having the hydrogen tank - a much lighter tank - on top, might be my issue.
I need to find a way to "carry" it through launch 🤔
You could do radially decoupled liquid fuel. Extra delta v plus more upward stability
