The app store has a lot of rules about in app payments. I'm creating a react native app (with expo) alongside a backend. I have implemented the steps from the docs (https://docs.mollie.com/mobile-apps/getting-started-payments). But I was wondering whether I can deploy this in the app and play store without any trouble.

Heyo! We from Mollie unfortunately can't really state anything about this, as we are not experts on the App Store policies ourselves. I think a good rule of thumb is "If others do it through in-store payments, you need, too.", but I of course understand that that's very vague guidance.
Maybe someone from the community here has some more experience
