Honestly, doing your MSQ is the answer to unlocking most content in the game. Hitting various checkpoints in the MSQ will unlock certain content or features.
So "just do the MSQ" is the answer to a lot of questions.

Cross class skills for crafters are no longer a thing after the past few crafting updates. Their kits have been homogenized. But it is still a good idea to level all of them at once because they feed into each other with materials.

I completed the stormblood healer job quest all in a row and it said that I won't be able to unlock the next one unless I do the role quest

Yes. You have to complete the level 80 healer role questline in order to unlock the three healer "job" quests, which are basically just like, you get to see what your friends (related to that job) have been doing while you've been off on your adventures.
Likewise completing the tank role quest unlocks the three tank ones, completing the caster role quest unlocks the caster dps ones, and completing the physical dps role quest unlocks the physical dps ones.
Post-HW is... about 50 or 60 quests.
After ARR, they dropped the number of post-expansion quests by a LOT. So there's about 10 per patch.
Post-HW also has much better story than post-ARR did, so there's that 😄
