So yeah, as of right now (assuming you are still in ARR story), the only way to get enough stat is to make ARR endgame gear

it is, but its like you get a fixed amount of gob coatings, 5 gob coatings if your collectability is at the highest. part 3 is 90 gob coatings and part 5 is 105 gob coatings.

Only that with the game now going up to lvl 80 it's not actually the endgame anymore
But anyway going up to 60 will probably be about 100-150 hours in playtime

Which is a good point to give you one very important piece of advice: Story progress is everything. Any meaningful content is locked behind progression in the main story quests. So being high lvl means nothing without playing the story
But most likely you will still be overlevelled just by how much xp the story quests give

Any solo content can be cleared by all jobs, roles be damned. Plus the story also has solo instances that have to be done solo, no parties allowed
But having a tank/healer along will reduce queue times for dungeons and the like, which is pretty much the main and only benefit you have to care about
(The story quests will also require you to do instances at certain points btw)

The housing demolition timer ticks down from the last time you entered your house; if there is no house built on the land, you can't enter it and therefore you can't reset the timer

Unlock the Restoration turn in recipes. Those are where you'll be grinding it out. Churn out as many as possible, then turn them all in at the counter to get a bunch of exp per turn in.
