Still kinda hard. The hardest mechs are numbers and hello world. You have to do mechs correctly, although the DPS check has disappeared and tankbusters/raidwides are much, much lighter. If you do HW1 correctly, with no goodbye world, you can actually kill before archive all.

Generally speaking, in no particular order
white - Standard gear. Crafted for most levels or bought from a vendor. Always can be High Quality.
green - dropped from a dungeon or crafted at an endgame level (50, 60, 70, or 80). The crafted stuff can be High Quality, and NQ gear will have lower stats then expected.
blue - Tomestone, raid, or quest reward gear
purple - reserved for relic weapons

Foremost among the ways to improve your gear beyond that being fixing that weapon - for that, you'll want to go to Kugane and look for bluequests in the markets. Specifically, depending on how much side content you did after Stormblood, either "Dramatis Personae" or "Hail to the Queen"

Gathering stat affect your chance to successfully gather a material, the general breakpoint you want to hit is 85, 90, 95, or 100 percent

There are 3 gatherer skills that add 5, 10, and 15 percent to your gather chance. That's why we have the 95, 90, 85 breakpoint.

Perception improve the chance that a item you gathered will turn out to be High Quality (HQ for short, this icon here )

HQ items are more desired because crafting with HQ items makes it easier to produce HQ product

If you are currently leveling, just focusing on more gathering stat is fine

If you are on endgame, I believe there is a gearing guide in #doh-dol-lounge

following the trend, will 5.4 have asthete materials in the allegory shop?

5.5 (a gear catch up patch if you will) will introduce a way to augment these dow/m using allegory

This is like how we have new Eden in 5.2, then 5.3 added ways to augment neo Ishgardian, and introduce the 2nd Nier alliance raid for people to catch up with gearing.

"What is the Glamour Dresser?"

The Glamour Dresser allows you to glamour an entire set of equipment at once when in a city or town. You can find the dresser in your inn room at any of the Adventurer's guilds.

"How do I use it?"

In order to use the Glamour Dresser you need to first put the items you want to use for glamour inside of it. This requires a one-time cost of one Glamour Prism per item. You're able to safely take out the items, but you'll need to pay another Glamour Prism to put it back into the Dresser. After you have put in the glamour items you want to use for your set you'll want to click on "Edit Glamour Plates".

When the plate window opens up you can select the stored glamours you have onto the slots of the plate to create the set you desire. Once you're satisfied with your glamour click on "Save". You can now apply your Glamour Plate by accessing the Character menu, clicking the Glamour Plate button, and choosing the Plate that you have made.

Well I raised paladin from 1-50 so I could learn how to tank

At 50 picked up red mage and now I’m lv55 after beating ramuh

I figured at 60 I could switch to Gun breaker and then I would have

A 60 tank and 60 dps

so it would be much less efficient

since you wouldnt get much exp at all

Dont worry too much about overlevelling or switching classes for optimal levelling, just play the job you like and level it as much as u want and if u feel like it , switch to levelling another one
