There is a small indicator on pieces of gear that is tied to a gear set. It's a small piece of paper on the bottom right of the icon. If it's in a list, however, there should be a setting or a checkbox to hide gear set items. And, yah, dun worry I've done it too.

Bosses are usually the least damaging part of the dungeon for the tank. Don’t feel bad/guilty about using defensive cooldowns for trash mobs
