I started reading about the plot of levels 15-20 because previous plot was different depending on your starter city. This helped me really with catching up with the story, fast and somehow detailed when it matters.

The fastest way is to buy the crafted i480 set, but don't feel obligated to do that if you're not in a hurry
Aside from that method, the best way is to run Eden 1-4, run whatever dungeons and purchase whatever you need with Phantasmagoria tomes to get the rest of the way to 455, then run Eden 5-8 a bunch of times for the Edencall set
filling in some slots with Crystarium 490 gear as you gradually get Allegory tomestones
There is also a free 485 weapon that you can get from a quest if you're completed the Stormblood alliance raids, and that weapon will be upgradeable starting next week

When you get a new skill the game just puts it in the next free slot, there is no actual method behind that
You will have to open up your skill menu and add all the skills manually again

All classes are largely the same so early on in the game and will get you through no problem. Archer works with damage over time and direkt hits while lancer goes for direkt hit combos early on if that helps?

Bard (or Archer until lvl 30) has a lot of party utility but not the highest dmg, but on the plus side it is one of the easiest jobs which might be good since you say you're new to MMOs
Dragoon (or Lancer until lvl 30) has very solid single target dmg and some minor party utility, it is also a pretty easy job to get into, maybe even the easiest melee dps
Ninja (or Rogue until lvl 30) has some interesting systems like Mudras and Ninjutsu + one of the best party buffs in the game. But it is a bit harder to play since it has a very fast paced phase where you gotta press ALL THE BUTTONS 😄
But in the end it comes down to your preferences and style and so on

I got a question, about the settings for controller:
I set up my extended skill bar so if I double tap L2 or R2 I got more skills there.
But now If I switch jobs for example from my WHM to my SMN then there are still the WHM skills in the extended bar and I have to change the setting for the skill bar.

The same thing happens with the level 60 and 70 poetics gear as well. We typically say that poetics gear will last you approximately until halfway to the next level cap.
You can't buy the same piece twice unless you've put one version into a retainer's inventory before buying it again
The game won't allow you to have two identically coded "unique" pieces in your inventory/armory at the same time
But if you do somehow manage to do that, then there is no way to reverse the purchase.
