You can visit various cities and burn your cash on orchestrion rolls and minions you don't have.

You can also use it on repairs, buying gear you need for alternate jobs, teleports, and crafting mats. For the most part.

How do I unlock my job?

To unlock your class' job you need to be level 30, complete all of your class quests and the main scenario quest 'Sylph Management' (lvl 20 quest) to be able to pick up your job unlock quest. Once you've done the initial unlock quest, you will be given a soul crystal which you must equip to become your class' job.
