generally recommend one combat retainer and one gathering retainer though it doesn't matter too much. combat retainers are nice to have if you're going to level crafters since you can send them out to gather materials that drop from mobs
the thing to keep in mind though is that retainers can only go as high as you are in that class
so if you're not interested in leveling gatherers, then there's no point in making a gathering retainer
and if you do make a gathering retainer, they can only gather items you personally have already gathered atleast once if you do the specific 1 hr ventures

info to add on leveling roulette (applies to most of the roulettes too), it gives bonus EXP based on the following factor:
A your level vs the level of the content: the higher the level difference, the more bonus. basically in the end, the exp your earn from killing mobs + bonus exp from roulette is worth while no matter how high you level is
B expected duration of the dungeon: ifrit, garuda, titan 4-player are in leveling roulette, but they give less bonus exp to account for the shorter "dungeon" time. this is more apparently with MSQ roulette, praetorium and castrum.

- Decide early if you want to do everything (in which case you want to multi-class, or you'll hideously overlevel the content), or just level through (focus the MSQ + class quests for one or two classes/jobs)

however its kinda weird
you have to swap to battle stance then sit and it counts you as having your weapon drawn whilst its undrawn
