Leveling all crafters evenly is a pain in the behind, but it's very much worth it for not having to lug around twenty different sets of gear and run across all of Eorzea for mats.

If you level one job up to max not only does that severely gimp what you can make without having to pay for a bunch of mats for most jobs but you'd also have to spend hundreds of thousands of gil on gear you could have, and should have made yourself

once you get to lvl 10 you can go to Ishgard if you have Heavensward unlocked and able to do the Firmament area. its called Diadem and you can level up crafters and gatherers through the mats in there pretty quickly.
