The only current specialist-only recipes are Ruby Barding and Furniture, the special-effect Shinryu glamour weapons, and one orchestrion roll.
In other words, apart from your already-chosen BSM, only Armourer, carpenter, goldsmith and alchemist currently have them.
The only other real purpose is to get the slight stat boost to the crafter that has the soul equipped.
You can change up to three specialists in a week, which is more often than you'll realistically need to.
In short
it doesn't really matter that much.

But the actual speed is identical.
