and a lot of jobs use materials from other jobs

To become a Ninja, you need to be a Rogue
Rogue is unusual in that it is a ARR starting class which starts at lvl 1, but new character can't become one directly
The fastest way to become a Rogue is to start as Marauder or Arcanist, which place you in the same starting city (Limsa Lominsa) as Rogue. Then you can become a Rogue once you finish your Marauder/Arcanist lvl 10 class quest
For players who have started in other cities, they can reach Limsa when they progress into lvl 15 
and complete any lvl 10 combat class quest

You get them by going through questlines

if you're leveling your first job, first and foremost just focus on MSQ (main scenario quests, ). They'll generally supply you with a good bit of gear, and as you unlock and run instances as part of that you'll pick up poetics which you can use for especially nice stuff like a weapon and such. Poetics will also be useful for gear at both level 60 and level 70, as well

So I just got to getting my ironworks armor and since I can only get one of the rings of casting, I opted for a ring of slaying. The recommended gear tells me to use another ring I have with more int but significantly lower crit hit, and direct hit etc
