In summary:
Mandatory: MSQ and your class quests.
Extremely highly recommended: most blue quests 
as they unlock content, dungeons, features. Some of the features they unlock are incredibly key.
(The exception is blue quests that unlock other classes. These aren't necessary to do unless you want to play that particular class. These are usually quite obvious, with names like "So You Want To Be a Pugilist".)
MSQ will give you the bulk of the exp you need for your first class; if you're on a preferred server, it will probably even overlevel. Other classes can be leveled with daily roulettes, dungeons etc.
Sidequests in most cases do not reward anything useful, so you should only do them if you want to experience the little stories and local area lore, or for completionism's sake.

@polar bay That's a tall order but I'll try to condense it as best as I can. Blue Mage is side content. A "limited job". Can't use duty finder because a few of the spells it can learn are legitimately broken on purpose. Minions having stats is part of a minigame called Lords of Verminion in the Gold Saucer. A rts of sorts. Gold Saucer was added btw. They have chocobo racing, mini-game events every 20 minutes, triple triad, lottery, etc. Crafting and gathering has been overhauled with a lot of side content added for those classes specifically, such as ocean fishing voyages. There's a lot to list so I'll skip to the class stuff.
As of the current expansion there are four tanks, three healers, and 10 dps classes (subcategorized into 4 melee, 3 ranged physical, and 3 casters). As there are too many to go over with one post I'll ask which do you want to hear about?

@polar bay Dancer is more or less the support class of the damage dealers. In between its party buffs and its dance partner mechanic, it's far more support heavy than the others. Bard has support as well but it's mostly passive in its alternating songs. Machinist has been stripped of most of its support with the recent expansion but it's been overhauled into something completely different that doesn't feel as awkward as it did in HW.

@polar bay Yeah there's a newish feature called glamour plates, glam presets in other words. There's a dresser in your inn room where you can store gear to use for the plates. There you can also make presets. Once the item is stored in the dresser, using the plates is free and costs no further glam prisms. Also prisms have been condensed all the way down to a single universal item.
