you can pick up the artisan's set from gc seals for crafters (though it'll be missing off hand iirc) and a few pieces of the forager set. I would recommend grabbing those and then pushing to 51 to get the hw gear @sly jasper

and then buy shadowbringers expansion to get all the expacs
or if you're sure you want to play the game and have everything right off the bat, you can buy the complete edition which is the base game + expansions (will also come with 30 days)
after those 30 days though, yeah you'll have to buy a sub to continue playing

yeah if you're playing the higher level stuff, AST can't die, they have an awful time getting their mana back unless you're really going hard into piety

AST does both too, all healers are damage dealers. Savage is more about beating enrage timers so healers need to bring in good dps
although AST has slightly less potency to make up for its faster cast and ability to OGCD after every m4.

ehhh WHM is so much more new player friendly. A lot of damage through glare and a lot of simple and powerful spells. AST is really fun though and great to learn

I've just hit level 50 and I'd like to really take my time with all of the endgame content for ARR. Is there a way to disable experience gain through a setting or item? Not possible to lock leveling unless you are softcapped by not owning an expansion.
You can always do the content as level 50, because you will be levelsynced to 50.
