The only mandatory requirement is that you must have an active "Soul Without Life" quest in order for Luminous Crystals to appear. You can choose to be on any job or use any weapon you like.

I chose to start off with a combat retainer and miner. Botanist is also an option instead of combat, though some combat materials can be annoying to get a lot of.
As for fishing retainer, they don't really get much useful materials and have more of their value in their retainer-unique items from the 16 hour ventures
